Organic
You would be hard pressed to find anything to beat the modern Dairy Shorthorn for organic milk production. They are ideal forage converters and produce high protein milk, which is of excellent quality for cheese production. They are the perfect organic milkers.
Starting Point
We started conversion from convention to organic milk production in 1999 as we felt that there was an economic opening in the market. We signed a contract with a local firm, Belton Cheese Ltd whose factory is at Whitchurch approximately twenty-two miles away. We are still with them to date and often rent land off them for our young stock.
Belton Cheese
They make both conventional and organic cheese such as Cheddar, White Cheshire, Lancashire, Wensleydale, Caerphilly, Double Gloucester and Red Leicester. Diary Shorthorn milk has always been recognised as more suitable for cheese production because of the excellent fat and protein ratio.
